Enjoy a Healthy Meal

 

Incorporating herbs into your life is another feature of an organic lifestyle. Cooking with fresh herbs is healthy. It will add sensational aroma and flavor.
 

Cole Slaw
6-8 servings

1 pound red and green organic cabbage, thinly sliced
3 medium organic carrots, thinly sliced
1 organic red bell pepper, finely chopped
1 organic green bell pepper, finely chopped
3 organic celery stalks, finely chopped
2 tablespoons fresh lime juice
2 tablespoons apple cider vinegar
4 teaspoons flaxseed oil
Cayenne, to taste
½ teaspoon celery seed

1. Combine all the ingredients in a large bowl with a lid.
2. Cover and shake
3. Refrigerate for 4 to 6 hours to allow the flavors to develop, shaking periodically.

Cabbage Soup

1 head organic green cabbage, coarsely sliced
1 ½ cups sliced organic carrots
4 organic celery stalks, sliced
3 organic garlic cloves, minced
1 organic medium sweet Vidalia onion, cut into chunks
1 organic medium zucchini, halved and sliced
1 organic medium yellow squash, halved and sliced
One 28 oz. can organic whole tomatoes
One 28 oz. can organic diced tomatoes
One 28 oz. can organic tomato puree
½ cup minced fresh parsley
¼ cup minced fresh basil
¼ cup minced fresh chives
Salt or cayenne to taste

1. Place all the vegetables and the tomatoes, tomato puree, and 6 cups of filtered water in a large stockpot; bring to a boil, then cover.
2. Lower heat and simmer until the vegetables are soft but not mushy, about 1 hour.
3. Add the herbs and salt or cayenne to taste.

 

Chicken with Brown Rice

2 chicken breasts
1 tablespoon of lemon-pepper spice
1 cup of brown rice
1 teaspoon butter
1 cup frozen organic broccoli

Broil chicken pieces and sprinkle lemon-pepper spice on top of each piece.
Cook 1 cup of Brown Rice. Drain.
Cook 1 cup of frozen broccoli
Mix broccoli and brown rice together put in 1 teaspoon of butter with lemon-pepper spice.

Carrot, apple & ginger juice

You will need 8 peeled carrots, 2 peeled and cored eating apples and a fleshy slice of root ginger

Simply juice the ingredients in a blender for a refreshing and healthy drink. Carrots need to form the majority of the juice so the flavor of the apples don't dominate - and remember, the ginger provides a nice touch of spice but use it sparingly to your own particular taste.

 

Carrot & Yogurt Spicy Dip

You will need ½ dozen peeled carrots, a 6oz pot of plain yogurt, a ripe avocado, 1 teaspoon of lemon juice and a couple of drops of pepper sauce

Mix the carrots and avocado with the lemon juice and pepper sauce to a smooth paste in a blender. Then combine this in a bowl with the yogurt. Serve it immediately with chunky strips of carrot, celery and your other favorite vegetables.

 

Honey Carrots

You willl need a good bunch of carrots, peeled and sliced, ¼ cup of honey, ¼ cup of melted margarine and a ¼ cup brown sugar

Boil the carrots for 5 - 10 minutes until crisp-tender, then drain and reserve ¼ cup of the carrot liquid. Combine this with the honey, margarine and brown sugar, stir well and pour over the carrots. Then gently cook over a low heat until ready to serve with your favorite meals.
